Recipe: Special Chicken Curry

Special Chicken Curry by Sarla Lala

1. Marinate 4lb chicken in below ingredients, using 2 table spoons of oil.

  • Ginger 1/2 – 3/4 tsp [could make paste out of this with salt and oil and keep in fridge 2 – 4 weeks]
  • Garlic 1/2 – 3/4 tsp
  • Chilli 1/2 – 3/4 tsp
  • Ground cumin 1 tsp
  • Ground coriander 1 tsp
  • Turmeric 1/2 tsp
  • Red chilli powder
  • Salt
  • Lemon
  • Tandori powder / paste
  • Yoghurt 3 table sp (optional)

2. Take some oil in a pan and heat, when oil is hot add:

  • 2-3 cloves
  • 2-3 1″ cinnamon sticks
  • 2-3 cardamom pods
  • 1 tsp cumin seeds

3. Add onions, fry until translucent.

4. Add chicken and let it cook until water evaporates (keep lid on and stir frequently).

5. Add 1/2-1 tin of chopped tomato and cook with lid on for 20-30 minutes.

6. Add halved potatoes for last 10 minutes or until cooked.

7. Add 1 tsp of garam masala for last 2 minutes.

8. Add fresh coriander. Close lid.
